Ingredients

  • 1 ¾ cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon Kosher salt
  • 2 teaspoon sugar optional, more to taste
  • 2 cups buttermilk see note below
  • ¼ cup vegetable oil
  • 2 eggs

Instructions

  • Preheat waffle iron(s). In a large bowl, combine flour, baking powder, baking soda, salt and sugar with a whisk.
  • In a small bowl or large measuring cup, combine buttermilk, oil and eggs. Whisk until well mixed.
  • Add liquid ingredients to the dry ingredients. Combine with a whisk until smooth.
  • Bake as directed, repeating process for each waffle. (My Belgian waffle maker uses approximately 1 cup of batter for each waffle and takes 4 minutes each to cook.)
  • Serve immediately with butter, syrup, powdered sugar, sliced strawberries and/or whipped cream - or anything else you like!

Notes

Note: If you don't have buttermilk, you can make it by putting 1 tablespoon of either white vinegar or lemon juice in a liquid measuring cup and adding whole milk so that the total amount is 1 cup. Gently stir and let it sit for about 5 minutes and it will be ready to use. For this recipe, you will need two cups of buttermilk, so you would need 2 tablespoons of white vinegar or lemon juice and enough milk to added to that to get to 2 cups.
