I’ve been so busy lately that I missed the first anniversary of the Mangia Monday blog! Looking back, I didn’t quite get up a post a week like I planned to do, but in one year, I made 47 posts – sharing either personal recipes or links to my favorite recipes from other food bloggers. (I think that I improved my photography skills , too. 😉) There are quite a few recipes in my drafts folder almost ready to post, so I hope to get back to my regular once a week routine once our life in Florida becomes a bit less about fixing things, cleaning and decluttering!
My first recipe post for Easy Date Night Pasta with Vodka Sauce a family favorite that I have been making for decades, so I thought it was appropriate that the first post for Year 2 is another one that my kids have grown up with – Homemade Buttermilk Waffles! Raising kids overseas has meant that family traditions are a bit harder to establish and maintain since we never know where we will be for Thanksgiving or Christmas or the 4th of July, but these waffles are a “Florida” tradition that our kids look forward to. They are usually one of the first things we make when we arrive, and for the past several years, they have been our breakfast for Christmas morning. (with Bacon!) I also make them at least once whenever we have houseguests, a feat that is made a lot easier by prepping the dry ingredients the night before and the fact that I have 4 waffle irons to work with. (I know! That probably sounds crazy, but having the ability for 4 people to have hot waffles at once is very important to me. 😂)
I promise that it is really easy to make homemade waffles! They are so much better than the frozen ones, and you only need 8 ingredients, most of which you probably have in the house already (or can make, in the case of buttermilk. See the note in the actual recipe).
As I already admitted, I am a bit of a waffle fanatic. I didn’t start out with 4 waffle irons, it just kind of happened over the years. When we got to 3, it felt unfair that one family member should suffer, so number 4 was added to the collection. My favorite is the Black and Decker waffle iron (affiliate link, shown below), and while I have purchased (and donated) many waffle irons over the years, this is the one that I bought 4 of and use the most.
Step 1: Preheat waffle iron(s). In a large bowl, combine flour, baking powder, baking soda, salt and sugar with a whisk.
Step 2: In a small bowl or large measuring cup, combine buttermilk, oil and eggs. Whisk until well mixed.
Step 3: Add liquid ingredients to the dry ingredients. Combine with a whisk until smooth.
Step 4: Bake as directed, repeating process for each waffle. (My Belgian waffle maker uses approximately 1 (scant) cup of batter for each waffle and takes 4 minutes each to cook.)
Step 5: Serve immediately with butter, syrup, powdered sugar, sliced strawberries and/or whipped cream – or anything else you like!
Another idea that we did this week is Chicken with Waffles! We had leftover Publix chicken tenders. We heated them up in the air fryer and made a quick honey butter sauce from this recipe for SOUTHERN FRIED CHICKEN AND WAFFLES WITH SPICY HONEY BUTTER SAUCE from Sweet Tea + Thyme and it made a great brunch!
Homemade Buttermilk Waffles
Ingredients
- 1 ¾ cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon Kosher salt
- 2 teaspoon sugar optional, more to taste
- 2 cups buttermilk see note below
- ¼ cup vegetable oil
- 2 eggs
Instructions
