I am a bit shocked that my last post was almost three months ago! I thought that the summer had flown by, but this really proves it. I am back, with easy Vegetarian Stuffed Sweet Potatoes from The Kitchn that I didn’t make any changes to! (Other than cooking the potatoes in the air fryer so I didn’t have to heat up my oven. š)
We found these to be plenty for dinner with a salad alongside, and the leftovers reheated perfectly for a few days for lunch. (With or without fresh avocado added, since that does not save well!) If your family is wary of vegetarian options, I think that a half potato would make a nice side dish alongside chicken or beef, too.
