Posted on January 15, 2018 – It seems that my cold is pretty much gone and my Mangia Monday mojo is back, thank goodness! I made three recipes last week that should eventually end up in posts and I will be trying a couple more this week, too. Today’s recipe for Thai Butternut Squash Soup from Jenn Segal at Once Upon a Chef falls perfectly in line with my goals to eat more veggies and less dairy in 2018. I have been loving this for lunch for the past few days, but it could easily be dinner with crusty bread or half a grilled cheese sandwich. (Although that negates the non-dairy part. Ha, ha!) I added toasted pumpkin seeds as well for a bit more crunch and protein.
