The pantry clean-out continues, and this Seared Scallops with Garlic Basil Butter from Inspired Taste recipe happened because I had one cup of Arborio rice and a can of chicken stock to use up. 😉 I found this The Only Basic Risotto Recipe You’ll Ever Need recipe from Cooking Light and wanted something to go with it that didn’t have a lot of ingredients. I thought scallops would work well, and I was right! It was a fancy, restaurant quality meal in about 45 minutes. Thanks, Google! 😂
I admit that I continue to struggle with getting a good sear on my scallops. I dried them and floured them and I was still not 100% happy with the results, since only a few had a nice brown crust. But I’ll keep trying until I get it right. They tasted good and they really were easy.
I kept to this recipe pretty closely, except that I added some lemon juice and zest at the end because I didn’t think the slices would be enough. I will definitely do that again!
Risotto takes a bit of time, but the results are worth it. (I recommend finding a helper to assist with the stirring so that everything is finished at the same time.) It was perfect with the scallops and lemony sauce.
