Posted April 9, 2018 – Sheet pan dinners are a go-to for me on busy nights, and these Sheet Pan Fajitas from Cooking Light didn’t disappoint. (I would recommend cooking the peppers a bit before adding the shrimp if you like them on the softer side.) All you need is corn and/or flour tortillas and sour cream (and maybe some avocado) and dinner is good to go!
