Grilling season continues, so I wanted to share another family favorite in our house. I know that lamb can be a polarizing meat, but it really can be quite tasty if it is prepared correctly! (I much prefer it to beef because I find the flavor more interesting.)
When my parents visited in June, I knew I wanted to make lamb for them and found this recipe for Lamb Loin Chops with Mint Chimichurri on Simply Recipes when I was doing a quick Google search. They looked easy, and I loved that I could use some of the herbs from my garden and make the chimichurri in advance earlier in the day as well.
In the US, I pretty much always buy my lamb at Costco. The quality is good, and nowhere else comes close to the value for money. I love both the loin lamb chops and the whole racks of lamb. (My favorite preparation for the whole racks is this Herb-Crusted Rack of Lamb from My Recipes.)
We grilled the lamb chops this time, but the recipe for the Lamb Chops with Mint Chimichurri actually calls for them to be prepared in a cast iron pan. So I guess the great news is that you can prepare this all year long if you would like! š
