I found this recipe for Instant Pot Fish Curry | Fish Molee when I was searching for something to satisfy my craving for the Hong Kong American Club’s Kerala Fish Curry, which I have really been missing. While it is not an exact match (their version is spicier and more red), I loved the Instant Pot technique for making it, and it was excellent reheated the next day, too. I did not have curry leaves, but I did have some very hard and not so sweet sliced mango that I bought at Aldi, so I made a bit of a salsa with that, lime juice, green onions and coriander, which was a nice addition. I had never make anything from Paint the Kitchen Red before, but I’ll definitely be looking to try some the other Instant Pot and air fryer recipes from the site soon!
