In honor of Valentine’s Day tomorrow, I thought I would post our favorite “fancy” recipe from My Recipes. Fortunately, this one is easy enough to do on a weeknight! (HK friends, my favorite chops are the very small ones that are available at the Tai Tam Wellcome and I do three racks to serve our family.) My go-to sides with this are mashed potatoes and asparagus. For easy and tasty asparagus, marinate the spears in a Ziploc bag ahead of time with olive oil, salt, pepper, and a splash of balsamic vinegar. You can broil the asparagus on high while the meat is resting for 4-7 minutes depending upon the thickness of the spears.
