We have been getting a bit lazy with the weekday vegetarian meal plan, and eating A LOT of meals out, so I wanted to get back on the healthier bandwagon again. I made these delicious Harissa Chickpeas with Whipped Feta from Pinch of Yum on Tuesday and then cooked chicken for the first time in over year on Thursday, but I will celebrate that three out of our seven dinners last week were meatless. 😉 This recipe was so good that I am going to make it again this week, too!
We served these as a bowl with lettuce, cucumbers and pitas and also added olives since we all love them. I may add cherry tomatoes for a bit of color next time, too. I could see them working with roasted cauliflower, quinoa or rice as well.
I loved how quickly this came together. I had to make a last minute after work run to M&S for the Rose Harissa Paste (yum!), and we still ate in about 30 minutes with me getting a little help from the family with the pita toasting and veggie prepping.
Leftovers (if there are any!) make a great lunch, and we enjoyed the feta sauce all week on sandwiches and with the leftover chicken.
