It’s been a whirlwind of a few weeks so Mangia Monday has been on hiatus. Truthfully, DoorDash has been making dinner for us lately, and we are on the plane/road again in Virginia and Pennsylvania for the next week now. I didn’t want to go a third week without posting a recipe, though, and we made one of our favorite summer dinners at my Mom and Dad’s house tonight. This Garlic Butter Grilled Steak & Shrimp from Cafe Delites is always a crowd pleaser, and it is pretty easy as well. We tend to serve it with corn on the cob and tomato and mozzarella Caprese salad. The perfect summer meal for a crowd!
I used organic boneless ribeye steaks from Whole Foods and 2 pounds of peeled and deveined shrimp for 5 people, but we have two steaks and about 1 pound of shrimp left for tomorrow.
I used 8 oz of unsalted butter, 2 tablespoons of chopped parsley, 5 crushed garlic cloves and a bit of salt for the garlic butter. For the Caprese salad, we combined small cherry tomatoes, pearl sized mozzarella balls, olive oil, white balsamic vinegar, salt and pepper and fresh basil to taste.
