It’s been a few weeks since my last post. A lot has happened. Packing up and moving out of our house for a renovation, the (temporary) destruction of our house and an almost Category 5 hurricane! I have been cooking in the house we are staying in during the renovation, but I have to admit it has been mostly old favorites and easy meals.
I had this Fire & Hearth Ancho Salmon for the first time many years ago at my friend Gretchen’s house. It was on the back of the package for the cedar planks she bought at the grocery store. She cooked it on the grill with corn and asparagus and it was one of the those meals that just screamed summer to me. When I got home, I went on a search for the recipe and had a hard time finding it, but I located it finally on the Glover Gardens website (where it is called (MARVELOUS) PLANKED SALMON WITH (MARVELOUS) SPICE RUB. (I have since found the same recipe in a cookbook that I already had, but I can’t remember which one and all my cookbooks are in storage! I promise I’ll update this post when I am able to find it again.
I used to make this recipe a lot in Hong Kong, where you can’t find cedar planks, and it is still delicious! I find baking the fish (skin side down) on a foil-lined baking sheet that has been sprayed with cooking spray at 400 F (200 C) for about 8-10 minutes, and then broiling it for an additional 2-3 minutes works well. (You may need to experiment a bit with your own oven.) This summer, I discovered that Aldi sold salmon already on a cedar plank – no soaking required! Those were great, but I’m not sure if they were only a summer thing or not.
I often serve this with Oven Baked Rice Pilaf, but it is also good with roasted potatoes. This is our current favorite, Crispy Air Fryer Potatoes from Thyme & Joy, which is super fast and easy. I also served this Thai Cucumber Salad with Peanuts from Once Upon a Chef. (I like to add tomatoes for color.)
