Every once in awhile, I see someone post a photo of a recipe, and I know I HAVE to make it as soon as possible. This recipe for Easy Cinnamon Rolls from Sally’s Baking Addiction was one of them. My friend Sandra posted her version and I immediately texted her, printed the recipe and had it ready to go for the weekend!
I have to admit I never actually made cinnamon rolls from scratch before. I don’t know why, other than that somehow in my head, I thought they were very difficult. They are not! There is some waiting required for sure, but it is mostly hands off and very worth it.
I will add photos from my process, but I’m not going to add any instructions here because Sally’s were perfect! I did use my stand mixer to mix (paddle) and knead (dough hook) the dough because I’m lazy, but everything else I kept the same. For the filling, I did half white sugar and half light brown sugar. I used milk instead of coffee for the glaze. Per Keelin, I might do 1.5 times the glaze next time, and I’m considering looking for a recipe with cream cheese since I do like that extra bit of tang.
This will be our Christmas morning breakfast, with scrambled eggs, sausages and fruit. And Mimosas, which is our Christmas tradition. I prefer mine with grapefruit or apricot juice personally, but the rest of the family is traditional. I’ll make the rolls the night before this time, though, since not being an early bird myself, “breakfast” on Sunday was actually lunch by the time I finished. I’ll probably even remove them from the fridge early and hop back into bed for a bit longer before the kids wake up and we open gifts. 😂
