Two weeks have passed again. Oops! 🤦♀️ It seems time flies when you have a lot to do. 😳 One of my pre-move projects is clearing the pantry, so I am trying to use at least one can/jar/bag of pasta with every meal these days. This recipe for Gnocchi with Pomodoro Sauce used up both a package of gnocchi and a can of tomatoes. Bonus!
Foodie Crush is a blog I am not that familiar with, but I found this recipe years ago and remembered it when I saw the gnocchi on the shelf. I try to make my own gnocchi as much as possible, but this boil then bake method with packaged gnocchi makes them pillowy soft and is a very comforting dish that comes together pretty quickly – even on a weeknight! Another bonus is that you can use the same pan the sauce is cooked in to bake the pasta and then serve it, so only one really dirty dish to clean up. 😂 I recommend serving this with a simple salad and crusty bread for dipping in the delicious sauce.
My “take it up a notch” addition to this is 4-5 chopped Calabrian chilis. I may have even drizzled a bit of Calabrian chili oil on mine as well. 😉
Here is the Gnocchi with Pomodoro Sauce recipe from Foodie Crush again. I make a few other changes as well:
- I used 2-3 T of olive oil instead of 1/4 cup
- I have made this with all of the herbs and some of the herbs, depending on what I can find at the store. I personally think that the basil and rosemary are most important, but I try to use at least three of the four called for
- You can add 4-5 chopped Calabrian chilis with the tomatoes. I keep the red pepper flakes as well, but feel free to omit them if you don’t like too much spice
- I am usually hungry so I tend to cook the sauce for only 30 minutes after the oil and onion step
- I omit the cream because I don’t usually have it
- I use chopped fresh mozzarella instead of the mozzarella balls because they are less expensive here
- Sometimes I don’t have Parmesan cheese or forget to add it. It is still good! Pecorino Romano works as well
