Hi, I’m Beth. Although my degree says accounting, the past 20 years, my job title has been wife, Mom and “professional” volunteer. I am always thinking about my next meal, a trait I inherited from my Mom, and passed down to my children that my husband is mystified by. My favorite Sunday activity is menu planning for the week, and my Mangia Monday posts started when I realized everyone didn’t feel that way! I wanted to share my favorite recipes so that my friends would have at least one day a week covered. I posted my first Mangia Monday recipe in January 2017. Three and a half years (and more than 120 recipes later), this blog was born during COVID-19, when I had a bit more time on my hands and kept getting messages from people about how Mangia Monday recipes were in their regular lockdown rotation.
In January 2020, our family decided to try being “weekday vegetarians” so many of the recipes I highlight now are plant-based. This is a decision we made both for the planet and our health, and it helped all of us to lose a bit of weight as well. On the weekend, though, you can find me happily going halvsies on a ShackBurger and a Chick’n Shack with my husband. (With a side of cheese fries, of course!)
Full disclosure that I think of recipes as a starting point. I don’t have a single cookbook or recipe printout that doesn’t have adjustments to it! I encourage you to modify the recipes I create and share so that YOUR family loves them! I will usually suggest some possible modifications, and I almost always reduce the salt and oil in recipes if I can.
While I do post some original recipes, I am mostly a food blogger groupie, which I hope will open you up to a wide variety of recipe sources that you didn’t know about before. Being a connector is one of my biggest passions, and being able to do this with food is a dream come true. I look forward to having you join me on the journey of creating beautiful and delicious food that your family and friends will love!
